Scallop Ravioli

Absolutely amazing! I can still taste the flavors and want more. The ravioli was perfection but then combining curry and saffron in a cream sauce...genius! The perfect bite was topped with a piece of almond brittle! My mouth was dancing with happiness. The space is beautiful and a perfect addition to the Arlington area. Excited for my next visit!

Wild Mushroom Lasagna

The mushroom lasagna was a perfect blend of rich, savory flavors .The locally sourced mushrooms provided an earthy element that was just delicious. A hearty dish but not at all heavy. I thoroughly enjoyed it.

Heirloom Squash Gnocchi

The Heirloom Squash Gnocchi at The Salt Line resonates with the heart and mind of a culinary student like me, deeply committed to sustainable and regenerative agriculture principles. With every bite, this dish reverberates a celebration of the vibrancy of local, seasonal ingredients, creating a connection that feels both elevated and comforting and deeply rooted in our community. The gnocchi itself is a masterclass in texture---pillowy soft with just enough chew to hold its form. The heirloom squash, undoubtedly the star, delivers a natural sweetness beautifully balanced by hints of sage and brown butter. The sauce is silky yet light, allowing the essence of the squash to shine through without overpowering the palate. A sprinkle of toasted pumpkin seeds adds a nutty crunch, grounding the dish with earthy undertones. What struck me most about this dish was the evident dedication to sourcing ingredients responsibly. Heirloom varieties are a testament to preserving biodiversity, and their use here is a poignant reminder of the importance of keeping these treasures alive in our fields and kitchens. I couldn't help but imagine the farms where this squash was grown, likely nurtured with care in rich, regenerative soils. This connection to the land enhances the flavor and deepens the meaning behind the meal, making us more appreciative of the food's origins. As a culinary student, this dish is not just a meal but an inspiration. It reminds me that great food doesn't need to be overcomplicated; it just needs to respect the ingredients and tell their story. The Salt Line has successfully created a dish that aligns with my culinary philosophy: one that values sustainability supports local farmers, and delights diners with its authenticity. The Heirloom Squash Gnocchi isn't just a dish---it's an experience that celebrates the best of what food can be when it's rooted in care for the land and the people who enjoy it. It's a reminder that as diners, we have the power to support sustainable cooking practices by choosing dishes like this one, which are made with locally sourced, sustainably grown ingredients. It's the kind of meal that excites me about the industry's future and my place within it.

The Salt Line Smash Burger

Best burger ever!! Cooked to "perfection", which could be a challenge for some Chefs (at times)! Staff is very courteous and extremely efficient!

Chicken & Waffles

Last Sunday I swung by the Salt line for brunch, since it was a convenient walk from the Leob Art Center at Vassar. The chicken and waffles was delicious, where the waffle was light and fluffy and the chicken thigh was already deboned before frying making it an ease to eat. The coffee hit the spot for brunch.

Rigatoni Bolognese

I believe that the Rigatoni Bolognese is a dish that combines comfort, elegance, and bold flavors, the Rigatoni Bolognese is a standout choice. Served as both an appetizer and entree, this dish delivers a sophisticated take on a classic Italian pasta. The rigatoni is perfectly al dente, holding up to the rich, meaty bolognese sauce, which is hearty and full of depth. The housemade ricotta adds a velvety, creamy texture that balances the acidity of the tomato-based sauce, while the egg yolk provides an indulgent silkiness that ties everything together. The sharp, slightly salty pecorino adds a delightful contrast, elevating the dish with its nutty, tangy notes. The basil oil is the perfect finishing touch --- fragrant and fresh, it cuts through the richness of the dish with a light herbal lift that keeps the flavors from feeling too heavy. Whether you go for the appetizer or the entree size, this dish offers a rich and satisfying experience, but the entree portion really allows the complex flavors to shine through. Perfect for pasta lovers seeking something a little more refined but still comforting. A deliciously memorable meal.
